This week has been a busy one for our house, and lucky depending upon how you look at things. To continue our luck in the new year tradition we have black eyed peas on New Year’s Eve and New Year’s Day. I made cookies in the shape of black eyed peas for the little people (and those who don’t like the real thing). Last night’s dessert was- what else? Cupcakes of course! And topping them was homemade frosting and a little veggie luck. Hope your new year is beginning just right!
Powdered sugar frosting:
3 cups powdered sugar, 1 tsp vanilla, 1/4 cup melted chocolate chips, 1 stick unsalted butter and milk added to desired consistency.
